After Pesadelo na Cozinha, Ljubomir Stanisic embraces new challenge in Comporta

 

After the success he achieved with Pesadelo na Cozinhathe TVI program based on Ramsay’s Kitchen NightmaresLjubomir Stanisic forays into a new challenge. He is going to be consultant chef at Sem Porta, at the Sublime Comporta Hotel. Ljubomir is going to join the team led by Iranian-Danish executive chef Salar Kayan at the restaurant formerly known as Celeiro.

The new menu at Sem Porta is going to give preference to the Alentejo cuisine, by using ingredients from local farmers. On the menu, there are many dishes that revolve around rice, an ingredient you just can’t escape from in Comporta. Dishes that feature this Comporta grown carb can be found in such dishes like the snapper with lime and chlorophyl ricethe fish and seafood rice, or in the vanilla rice pudding with avocado ice cream and candied pear.

Other famous dishes of the restaurant range from the Cabeça de Xara (pig head pudding) with homemade pickles and cilantro mousse and the spicy octopus with bread migas à lagareiro, mint and Bulhão Pato broth. For dessert, there are many options such as the Marie biscuit ice cream with Nisa cheese foam and strawberry jam.

Stanisic starts by making the difference by creating a gastronomic garden, together with the company Ervas Finas, which has planted spices, legumes, and herbs in an area close to the restaurant.

It is in this garden that a table has been planned to be set in the warmer months to serve special meals with tasting menus prepared by the chef, who’s been in Portugal for two decades now.

The restaurant is also worth a visit due to its bar menu - don’t forget that Ljubomir wrote a cocktail recipes book. His team of bartenders from 100 Maneiras, Jorge Camilo and Daniel Zamith, created a list of cocktails for Sem Porta with 17 entries, including mocktails (non-alcoholic cocktails). You can also choose to have a 100 Porta, made with the herbs grown in the garden.

Ljubomir Stanisic became known to the public eye because of the TV program Pesadelo na Cozinha. However, he’s been showing his talent in gastronomy for many years now. Besides his 100 Maneiras restaurants in Lisbon, he is also the gastronomic consultant for the Six Senses Douro Valley Hotel restaurant. Ljubomir became acquainted with the Comporta region when he took part in organizing Mel, a party at Herdade da Comporta.
